touge tofu stews

1 tofu box
100 gram bean sprouts
5 large red chilies (discard, sliced slices)
1 stalk of onion
1 stem of celery leaves
1 tomato (quartered)
1 galangal segment
1 sheet of kaffir lime leaves
Right amount of oil)
Ground spices:

5 cloves of garlic
8 cloves of shallot
10 pepper grains
Salt to taste)
Sugar (to taste)
Powdered chicken stock (to taste, if desired)
Sweet soy sauce (to taste)
How to make:

Cut into cubes or long tofu boxes, fry until the outside is dry or half cooked.
Wash the bean sprouts, drain briefly.
Heat some oil, saute seasonings that have been mashed until fragrant.
Add galangal and orange leaves.
Add the bean sprouts to the seasoning stir and stir well.
Add tofu, stir well.
Add water according to taste then add tomatoes, leeks and celery leaves.
Add sweet soy sauce according to taste, cook until all ingredients are cooked.
Correct the taste, lift the stew tofu bean sprouts that have matured.
